Banana Bread

2 Oakdell Omega-3 Brown Eggs
1 cup sugar
1/2 cup butter, softened
1 tsp vanilla
4 very ripe bananas, mashed
2 cups all-purpose flour
1 tsp cinnamon
1 tsp baking soda
3/4 cup semi-sweet chocolate chips

Crumb Topping

2/3 cup all-purpose flour
1/3 cup brown sugar, packed
1/3 cup honey roasted peanuts, roughly chopped
4 tbsp butter, softened

Peanut Crumble Banana Bread Directions

  1. Preheat oven to 350 degrees F. Spray 9x11 pan with non-stick cooking spray. In a large bowl, cream together sugar, butter, and vanilla with a hand mixer. Mix in eggs and bananas.
  2. In a medium bowl whisk together flour, cinnamon, baking soda, and salt. Add to the wet ingredients and mix until well incorporated. Stir in chocolate chips.
  3. To make crumb topping, mix flour, brown sugar, and peanuts in a small bowl. Place dollops of butter into the mixture and press together with your hands creating medium sized crumbs. Sprinkle crumble over the bread and bake for 28-33 minutes or until a toothpick inserted into the center comes out clean.
