| 1 Oakdell cage-free egg | 
| 1 cup all-purpose flour | 
| 2 teaspoons baking powder | 
| 1/2 teaspoon salt | 
| 3/4 cup light brown sugar, divided | 
| 2/3 cup pecans, chopped, divided | 
| 2 small ripe bananas, divided | 
| 2/3 cup whole milk | 
| 1 cup boiling water | 
| 2 Tablespoons dark corn syrup | 
Caramel Sauced Banana Cake Directions
- Preheat the oven to 350 degrees. Butter a 9x9 baking dish. Set aside.
 - In a medium bowl, mix together flour, baking powder, salt, ½ cup pecans, and half of the brown sugar.
 - In a large bowl, mash 1 banana, add melted butter, milk, and egg. Whisk together. While stirring, slowly add the flour mixture until combined. Transfer mixture to the prepared baking dish and sprinkle the remaining pecans on top.
 - Add the remaining brown sugar and corn syrup to the boiling water and mix together. Pour over the cake and cut 1 banana in half horizontally and press into batter, cut side up.
 - Bake for 35 minutes. Serve while warm and top with ice cream if desired.
