| 6 Oakdell cage-free eggs |
| 1 Tablespoon heavy cream or milk |
| 1 teaspoon salt |
| 1/2 teaspoon pepper |
| 2 green onions, chopped |
| 1 Tablespoon oil |
| 6 ham steak (approx. size 5x4 inches each) |
| 6 slices sharp cheddar cheese |
Ham Shell Protein Tacos Directions
- Preheat oven to 350 degrees. Line a baking sheet with foil and place ham on top. Cook ham for 10 minutes to soften the ham and make flexible.
- In a medium bowl, whisk together eggs, cream, salt, and pepper.
- Heat oil in a large non-stick skillet over medium-high heat. Pour in egg mixture and move eggs around to scramble. Cook for 3-4 minutes or until cooked through. Remove from heat and stir in green onions.
- Top each slice of ham with 1 slice of cheese and eggs. Fold over ham slice and secure with 2-3 toothpicks. Bake for 15 minutes. Remove toothpicks and serve.
