Gnocchi in Italian Tomato Sauce

Gnocchi is a great idea for dinner. Boil up some potatoes, add some Oakdell eggs, flour, and salt mixing everything together and you can make gnocchi. Simple and delicious.

Ingredients

Gnocchi

2 medium russet potatoes
1 1/2 cup flour
3 Oakdell Omega-3 Brown Eggs

Italian Tomato Sauce

1 can diced tomatoes
2 tbsp Italian style tomato sauce
1 cup prepared salsa
1 tbsp Italian seasoning blend
2 tps salt
1 tbsp pepper

Gnocchi in Italian Tomato Sauce Directions

  1. To make the gnocchi, peel, chop, and boil the potatoes until they are fork-tender.
  2. Using a potato ricer, rice the potatoes into a large bowl. Add the 1 1/2 cups flour, Oakdell eggs, and salt. Mix together until well combined. If needed to create a firmer dough, add the remaining flour and mix together.
  3. Divide the dough into four parts and roll each portion out into a long rope and then slice the rope 1-inch pieces.
  4. Bring a large pot of water to boil with a tbsp of salt. Add the prepared gnocchi to the pot of boiling water and boil for about 5 minutes or until all the gnocchi rise to the top of the pot.
  5. Remove the gnocchi and set aside.
  6. To make the sauce, to your blender add the diced tomatoes, tomato sauce, prepared salsa, Italian seasoning blend, salt and pepper. Blend the sauce together until it is smooth.
  7. Heat a large skillet on the stove and add enough olive oil to lightly coat the bottom of the pan. Add the cooked gnocchi to the pan and sauté until they get a little color on them.
  8. Add the blended tomato sauce to the frying pan with the gnocchi and sauté everything together for about 5 minutes. Serve as is and enjoy! If desired, sprinkle with parmesan cheese.
