2 Oakdell Cage Free Eggs
2 large naan breads
1 tbsp olive oil
4 tbsp basil pesto
1/2 cup mozzarella, shredded
1/4 cup sun-dried tomatoes with herbs in oil, chopped
1/4 cup bell pepper, diced
1 cup arugula
Salt and pepper, to taste
Fresh parsley, chopped
Parmesan flakes

Egg Naan Pizza Directions

  1. Preheat oven to 400º Place naan on oven rack and bake for 10 minutes. Remove
    from oven.
  2. Place olive oil in large skillet and heat to medium-high. Add Oakdell Cage Free eggs and cook until almost over easy.
  3. Spread two tablespoons pesto on each naan. Add 1/4 cup mozzarella, 1/8 cup sun-dried tomatoes, 1/8 cup red bell peppers, and one egg to each Place on a baking sheet and cook for 5 minutes or until the cheese is melted. Remove from oven and top with parsley, salt, pepper, and parmesan.
