6 Oakdell Cage Free Eggs
2 tbsp olive oil
6 white corn tortillas
salt and pepper to taste
1 cup refried beans
1 lime juice wedge (plus more for serving)
1/2 tsp fajita seasoning
1 cup tri-color coleslaw mix
1/3 cup cilantro chopped
1/3 cup salsa

Breakfast Street Tacos Directions

  1. Add oil to a large skillet and heat over medium-high heat. Cook tortillas for 60-90 seconds on each side, or until lightly browned. Set aside.
  2. Add eggs to skillet and cook over medium-high heat until egg whites set, about 3 minutes. Flip over and cook until the yolks are set, about 2 minutes. Add salt and pepper to taste.
  3. In a small microwave safe bowl, warm up refried beans in the microwave for 30 seconds at a time; stir in between. Stir in lime juice and fajita seasoning. Spread over tortillas.
  4. Place egg, coleslaw, cilantro, and salsa on top of beans. Fold tortilla in half to make a taco and serve with lime wedges.
