Nutritious Zoodles Carbonara

1 Oakdell Omega-3 brown egg + 1 Oakdell egg yolk
1/3 cup grated parmesan cheese + more for serving
½ teaspoon pepper
¼ teaspoon cayenne pepper (optional)
1 teaspoon salt
1-2 teaspoons extra virgin olive oil
2 medium zucchini, spiralized* (or about 3 cups of premade zoodles from the grocery store)
1/3 cup onion, diced
¾ cup cubed canadian bacon
15 cherry tomatoes (not sliced)
2 teaspoons minced garlic


  1. Lay the spiralized zucchini between paper towels to absorb excess water. (If you are using pre-made zoodles from the grocery store, this step can be omitted.)
  2. In a large non-stick pan, add olive oil to pan and cook onion over medium heat until soft, about 2 to 3 minutes. Add canadian bacon and cook for another 2 minutes or until warm. Next add tomatoes and garlic and cook for an additional minute. Toss in zoodles and continue cooking until tomatoes start to blister and zoodles are warm, about 3-4 minutes.
  3. While zoodles are cooking, whisk together Oakdell whole egg, yolk, pepper, 1/3 cup parmesan cheese, and cayenne pepper (if desired) in a medium bowl.
  4. Add salt to the zoodles and stir in the egg mixture. Cook for about another minute or until egg mixture is cooked and remove from heat. Serve with extra parmesan cheese, to taste.

*Notes: Substitution for spiralized zucchini is to use a vegetable peeler to get long zucchini strips, or you can purchase already made zoodles at a grocery store.
